Xylitol is a naturally-occurring, five carbon atom molecule. It is found in many fruits and vegetables, and is even produced by the human body itself. Xylitol does not effect your glucose levels, making it diabetic safe. Commercially, xylitol is made from xylan rich hemicellulose sources such as birch and other hardwoods.
Xylitol has a natural pH and therefore is not a food source for bacteria to feed. If your saliva is a neutral pH of 7 after consuming pure xylitol, the pH remains a 7; it has not fed the bacteria but it has not killed the bacteria either.
